As someone who grew up in Alaska, I’ve always been picky about seafood — especially roe. After relocating to the East Coast, I tried several brands but couldn’t find anything that matched the freshness I was used to. Then I came across Bester Caviar and decided to try their keta salmon roe. I honestly didn’t expect much, but the moment I opened the jar, I was hit with that familiar, clean aroma I remember from home. The eggs were large, glossy, and had that signature pop and briny sweetness that makes keta roe so unique. I served it over warm sushi rice with a soft-boiled egg and scallions — it was simple but incredible. This is now my go-to when I’m craving a nostalgic taste of the Pacific Northwest.
